Не знаю как объяснить, но по большей части ставится окончание -s(books), а -es ставится как вс Как бы это на слух можно определить. Taxs вроде не очень звучит, правильно taxes. Если заканчивается на o, например piano-окончание s. Если заканчивается на y, например baby-y меняется на i и окончание es. Если оканчивается на f и fe, например life, то f-меняется на v и окончание es. Если оканчивается на -o или –sh , -ch , -x , -ss , -tch , тогда окончание es, например to pass-to passes. Но не обязательно все это запоминать, думаю это само по себе можно понять какое окончание.
